Raw Zucchini Hummus

2 medium zucchinis
½ medium red bell pepper
¾ cup tahini
½ cup lemon juice
¼ cup olive oil
3-4 cloves garlic- minced
dash paprika
dash cayenne pepper
sea salt

For variations use ¾ cup fresh herb like cilantro, dill or rosemary.

Blend all ingredients except tahini in a high power blender until thick and creamy, then add tahini and blend again.

Hummus Collard Wraps

8-10 Collard greens- cut on each side of spine
Zucchini Hummus
1 cup diced tomatoes
½ medium red bell pepper- cut into strips
1 ½ cups shredded carrot
1 cup cucumber- peeled and cut in half and sliced into disks
1 ½ cups sunflower sprouts
Diced red onions optional

On each collard, spread a thick layer of hummus, followed by layering the other ingredients, then roll up and enjoy!
