Raw Cherry Nut Bars Recipe

This raw cherry nut bars recipe is great for transitioning to a raw diet. These also make great snacks for traveling or weaning kids off standard junk food. As well, this is a great recipe for using up the apple pulp from making juice. If you don't have apple pulp, simply substitute whole apples.

1 cup Raw walnuts, hazelnuts or pecans
1/4 cup raw dried cherries (unsulphured)
1/2 cup raw honey or agave nectar
2 cups apple pulp or 3 apples
1 cup fresh cherries- pitted
seeds from 1/4" vanilla bean
dash of cinnamon

Process all ingredients except dried cherries in food processor until smooth but still a bit chunky. Cut up dried cherries and add to mixture. Spread evenly onto teflex sheet and dehydrate at or below 114 degrees. After a few hours flip onto dehydrator sheet and remove teflex. Continue to dehydrate until crisp on edges. (overnight works great)
